NOTE! I suggest using the method posted below the pictures. Its much easier and much safer Also seems to work for more people.
Requirements: SSH ability (google for this) iPod Touch, iPhone jailbroken WinSCP, CyberDuck, Trasmit or the like OpenSSH from Cydia or installer BSD Subsystem if you are on 2.0.0 or earlier
Step One: SSH into your iPod or iPhone (im just going to say iphone from now on but it applys to iTouch as well) and navigate into /System/Library/CoreServices/Springboard.app/English.xx/
Step Two: Copy SpringBoard.strings to your desktop.
Step Three: Open SpringBoard.strings in notepad and find the words, "Slide To Unlock" (without the quotes) and change it to what ever you want. It can't be more than about 16 spaces before it starts to get cut off. Obviously this changes depending on what font your using and what you type. Save that.
Step Four: Go into WinSCP or w.e u chose to use and rename the original SpringBoard.stings that is currently on your iPhone to SpringBoard.strings.bak. Then copy over the edited SpringBoard.strings from your computer. Respring and enjoy! heres a screenshot (Sorry BOyOfWONDEr) Daaang! That's Fly! doesnt fit
----------New, Easier Method----------- This method is much easier than what i posted above.
Download Customize from Cydia. (CYDIA not installer) respring or w.e and open customize. Edit System Strings, choose your language and have at the editing

the customize app doesn't work for me... it closes itself after i open it... i'm on 2.2 firmware if it helps.

customize is dead, the server is down. it was good for the 1.1.x firmwares.

yeah guess so... and i can't edit the springboard.strings file.... well... it doesn't work for me
Slide text that appears is : AWAY_LOCK or wtv.. and no calender text too.. glad that's just txt files... and i've made backups

download the customize zip from a website somewhere install it and then run it... restart ur phone if it crashes.
